Easy Quick Indian Cooking Recipe - sudhi - 08-04-2009

Hi Everyone,



I am passionate about food and cooking, sort of a hobby.I would like to share my indian food knowledge with everyone.Melbourne has many good indian resturants but most of them are not authentic, indian cuisine has lot more than just the regular curries which you see in the indian resturants in Melbourne.I am single and love to cook every day, when I am tried and lazy I have few easy quick recipes that taste great.One of those is (Gutthi Vankaya) Eggplant fry.



Eggplant Fry -



Ingredients



1. Eggplants

2. Onions

3. Ginger

4. Garlic

5. Corriander(optional)

6. Salt

7. Chillies or Chilli powder (optional)

8. Oil

9. Tumeric powder (optional)



How to Cook:



1. Chop eggplants and onions, finely chop ginger and garlic.

2. Pour some oil in a non stick pan, let the oil heatup a little and through in the choped onions first.Fry them until them turn to transperent on medium heat.

3. Then add ginger, garlic, tumeric powder and chillies.Fry until garlic turns soft.

4. Add chopped eggplant, add some salt, stir and cover with lid.

5. Stir and check if the eggplants turned soft.

6. When the eggplants are soft, turn off the heat, add some chopped fresh corriander and stir.



Thats it, a beautiful tasty vegetarian indian dish which can be cooked in 10mins.You can have it with some rice or naan or I got a simple trick for you, get a pack of puff pastries from Safeway or coles, split the sheet into 2 half, transfer the eggplant dish into some other bowl and reheat the pan and fry those sheets of pastry both sides until crispy.Try the eggplant dish with fried puff pastry, Yummy. Hi Glen,



Red Pepper is one of my personal fav., authentic punjabi food, 5 stars they have improved the quality of service as well which was sloppy earlier. My all time fav in Melbourne is Biryani House 339 King Street, Near Flagstaff Station.As the name suggest Biryani is the best you can get in Melbourne.
